五花肉 (500克) 荔浦芋 (500) 青菜心 (30克)
调料
油盐糖料酒姜 葱蒜老抽鲜抽 胡椒粉红腐汁

五花肉洗净,放入炒锅,加适量水,加姜,葱,料酒,大火煮开5分钟,小火20分钟.

在肉皮上用牙签刺些小孔

放入炒锅,肉皮朝下,煎炸至肉皮发黄。

锅里倒适量油,放入芋头片

炸至表面微黄捞出控油.

用老抽,鲜抽,盐,糖,姜,蒜,胡椒粉,蚝油,红乳汁等调成调料待用.

浇上调料汁

放入蒸锅,大火蒸20分钟,小火60分钟.关火.

撇出蒸碗里的汤汁,把芋头与肉倒扣在菜盘里.

放入用开水焯好的青菜心,再浇上汤汁即可上桌。
小窍门:1.芋头与五花肉要切的一样大小才好摆盘,也好看。 2.五花肉一定要擦的没有水分了才好煎炸,否则会有油溅出伤人.
