有些食物用料朴质,做法简单,可味道却特别的难忘。这个炒饭就是那样的一个食物,它不华丽,做法也可以有更多的变化,可即使在最简单的时候,它也让人觉得滋味无穷。

Sometime the best food that brings us right back to our memoriesare the simplest of all. Just like this fried rice,it is easy toprepare, and tasty to eat. The only trick is to have the rightingredients.

材料:
2 碗 冷饭(最好是泰国香米饭)
1/2 碗 江鱼子 Anchovy --白肉的最佳(去内脏洗净)
1 只中型洋葱 切丝
3-4 根 泰国辣椒 切段(不嗜辣可以减半或用一点辣椒粉代替)
一点 葱花
荷包蛋一个 Optional
调味:
麻油几滴
盐适量 (大约 1/4 小勺)
Ingredients:
2 bowl ofcold cooked rice(Thai Jasminerice preferred)
1/2 bowlof Anchovy --White color preferred (cleaned andwash)
1 Mediumsize onion (sliced)
3-4 Thaior green chilies (Sliced)(Reduce if you don't like it toohot)
SomeChopped Spring Onion
1 Friedegg Optional
Seasoning:
Few dropsof Sesame Oil
Salt totaste (about 1/4 tsp)
1.锅里下两大匙油,先把江鱼仔炸脆备用。(可以半脆的时候捞起来,沥干油,再入微波炉 45 秒-1分钟,这样做铁定脆的。)
2.锅里剩下的油把洋葱和辣椒炒香,倒入米饭,炒散,至火候足之后,加盐调味,滴入几滴麻油翻匀。熄火,倒入刚刚炸脆的鱼仔,翻匀,撒上葱花,加上个荷包蛋,趁热开吃!
1. In a cooking wok, heat up 2 tbsp of oil, and frythe anchovy until crispy, drain and set aside. (Alternatively, tosave time, you can take it out half cook, drained, and microwave itfor 45 seconds - 1 minute, a sure method to give you crunchyanchovies).
2. Stir in onion andchilies, stir until fragrant, add rice, and keep stirring until therice are all loose and slightly "jumping" in the wok, add salt anda few drops of sesame, turn well, remember not to add too much saltas the anchovies are already salty.
3. Turn off the stove,and now add the anchovies, mix well, add some spring onion, Servewith fried egg.
